Indonesia's Soto Lamongan Makes it to the World's Best Chicken Soup List

TEMPO.CO, Jakarta - Soto Lamongan from East Java, Indonesia is included in the list of the 10 most delicious chicken soups in the world according to TasteAtlas, an online guide platform that discusses traditional dishes, authentic restaurants, critic reviews, and focuses on various world dishes.

In the list released on January 31, 2025, the soup-based culinary is in third place with a score of 4.4 out of five review stars, 90 percent of people like it and 10 percent are indifferent.

This menu is the only Indonesian dish included in the list. Last year, soto Lamongan was ranked 42nd out of the 50 most delicious soups in the world along with four other dishes, namely rawon, soto betawi, gulai, and empal gentong.

What is Soto Lamongan?

Soto Lamongan is a food with a yellow broth that is rich in spices. This food is made with pieces of chicken that are slowly boiled in broth with various spices, including lemongrass, coriander, cumin seeds, galangal, garlic, turmeric, candlenuts, and ginger.

The ingredients are ground, then fried first and put in boiling water. Add flavoring to produce a more delicious and savory broth. After the chicken is cooked, shred the meat according to taste.

Generally, one portion will be served with noodles, cabbage, spring onions, boiled eggs, a sprinkling of koya powder, and other accompaniments. This traditional sterseup is usually eaten with chili sauce and warm rice. This menu is perfect for breakfast, rainy weather, and dinner to warm the body.

By the local community, Lamongan soto is made in a large bowl, accompanied by slices of lime, chili sauce, and crackers. This food is often a breakfast menu or main course at lunch. Although the presentation is simple, the distinctive taste thanks to the spices makes this soto a favorite dish.

History of Soto Lamongan

According to Antara, soto lamongan first appeared around 1980 to 1990. Before becoming the soto known today, the menu had gone through a long process and combined various acculturations, from China, Java, to the Netherlands. At that time, some of the residents of Lamongan were migrants who traded soto in Indonesia. The impact of Chinese peranakan processing on the chicken soto recipe is still there, as can be seen through the use of vermicelli, soy sauce, and bean sprouts.

In addition, the use of spices in the broth reflects Javanese traditions influenced by Indian culture. Traces of European cuisine can be found through ingredients such as coriander, pepper, celery, and cabbage. As time goes by, soto Lamongan has developed and has many variations, but the characteristics of the broth are maintained.

- Third is Soto Lamongan from Indonesia with 4.4 stars.
