TEMPO.CO, Jakarta - Taste Atlas released its list of the best condiments in the world on November 15, 2024. The renowned global culinary resource recognized the exceptional flavors of Indonesia by including three of its condiments in the world's top 100 condiments in 2024.
Bawang goreng or fried shallots ranked first in the list. The other two Indonesian condiments listed are Kecap Manis or sweet soy sauce and Serundeng. Let’s get to know them below.
1. Bawang Goreng (Fried Shallots) #1
Fried shallots are created by thinly slicing shallots and frying them until they achieve a crispy, golden-brown perfection. This simple yet versatile condiment offers a bitter and savory flavor profile that elevates various dishes. This condiment is usually sprinkled on fried rice, chicken satay, soups, beef stews, and many more.
2. Sweet Soy Sauce #16
Kecap manis or sweet soy sauce is often used as both a cooking sauce and a dipping sauce. This dark and syrupy sauce is highly aromatic and sweet, derived from palm sugar with hints of molasses, caramel, and butterscotch.
Kecap manis is often infused with a blend of spices, including cloves, coriander, cinnamon, star anise, and black pepper. It is the most popular type of soy sauce in Indonesia and is often added to dishes such as nasi goreng (fried rice), ketoprak, ayam kecap, and semur (beef stew).
Due to the past Dutch colonialism in the country, kecap manis is also popular in the Netherlands.
3. Serundeng #41
Serundeng, among the most used condiments in Indonesia, is deeply rooted in Javanese culinary traditions. This flavorful condiment is made by combining toasted grated coconut with various spices, including garlic, shallots, turmeric, tamarind, kaffir lime leaves, chili peppers, coriander, galangal, bay leaves, and sugar.
The spices are ground into a paste, then fried and mixed with the toasted coconut, often with the addition of roasted peanuts for extra crunch. Serundeng is a versatile condiment, commonly sprinkled over dishes like ketupat (rice cakes), soto (soup), or sticky rice.
